Wine making

Sustainable viticulture. Traditional hand picking. Pressurage direct, Mutage sur jus, Sucre résiduel. Ageing in oak barrel, Light filtering, Bouchon technique en liège, Elevage en barriques françaises. Sols calcaires, Sols crayeux, Sols limoneux.

Appareance

Copper colour, deep, amber highlights.

Nose

Aromatic, complex, subtle quince aromas, subtle orange aromas, subtle raisins aromas, subtle spice aromas, arômes balsamiques, subtle mocha aromas, subtle tobacco aromas.

Palate

Complex, generous, velvety, toasted almonds hints, cocoa hints, notes de noisette grillée, round, good intensity, long length. En bouche, l’expression marc de Champagne est encore dominante avec des notes de noix, de pruneau et de prunes cuites. La patine apportée par le vieillissement rend la sucrosité gourmande. Une belle acidité et une amertume soutenue apportent une belle énergie à ce ratafia atypique. Final sur les fruits secs, la figue, les pistaches, les noisettes et la fève de cacao.
